In order to obtain this unique cuvée, Nicolas Alziari hand-picks from a variety of olive trees, and only collects "flower of oil". This nectar can only be obtained in a mill, which uses an age old method rarely in production. By slowly crushing the olives with a stone wheel, and adding spring water in order to extract its oil. Thus, the absence of pressure allows this rare technique, with very low yield, a greater concentration of aromas. Guaranteeing the most noble quality and durability.
